FETA & PISTACIO DIP


Ingredients:

Serves 6

100g shelled pistachio nuts

75ml olive oil

300g feta cheese

Handful of dill, roughly chopped

Handful of coriander, roughly chopped

1 garlic clove, chopped

1 red chilli, roughly chopped

3 large tbsp Greek yogurt

Zest of 1 lemon

Juice of ½ lemon

Method:

 1.     Blitz the pistachio nuts first for a moment and then add the olive oil and blitz again for about 30 seconds. I do this in a Nutri-bullet but any food blender works.

2.     Add in all the remaining ingredients and blitz for about 1 minute, or until everything is blended.

3.    Make it pretty with a drizzle of olive oil, rose petals or some chilli flakes.

It’s that simple! Eat it with delicious bread or as an accompaniment to a meal.
